Ingredients:
- 1 piece of ready-made smoked ham (3.6 - 4.5 kg) with bone (from the end of the ham or knuckle)
- 1/3 cup brown sugar
- 1/4 cup sweet smoked paprika
- 2 tbsp garlic powder
- 2 tsp dried oregano
- 1/2 cup olive oil
- 2 tablespoons Dijon mustard
Preparation:
- Let the meat rest at room temperature for 30 minutes. Preheat the oven to 160°C (325°F). Trim the rind if necessary. Make diagonal cross-cuts in the ham, cutting through the fat without cutting into the meat.
Place the ham flat side down on a rack in a baking dish. Add 1/4 inch of water to the bottom of the dish. Bake the ham until the internal temperature reaches approximately 130°F (55°C), about 2 hours 30 minutes, or 15 minutes per 1 pound (450 g).
- Meanwhile, in a small bowl, combine the sugar, paprika, garlic powder, and oregano and mix well. Whisk in the olive oil until the mixture forms a smooth paste.
- Remove the ham from the oven when the internal temperature reaches 135°F (55°C). Increase the oven temperature to 425°F (220°C). Brush or drizzle the ham with mustard.
Spoon the spice paste evenly over the entire surface of the ham. Add water to the bottom of the pan if needed. Return the ham to the oven and bake for about 25 minutes, turning once halfway through, until the paste has formed a light, brick-colored crust.
