Greek-Style Chicken Stew (Kota Kokkinisto) topcook.tomathouse.com
Ingredients:
- 1 chicken, cut into 8 pieces (0.9 - 1.4 kg)
- 3 tbsp. l. olive oil
- 1 teaspoon ground cinnamon
- Salt and ground black pepper
- 2 coarsely chopped onions
- 3 crushed garlic cloves plus 2 whole cloves
- 110 ml dry white wine
- 2 tbsp of water
- 170 g tomato paste
- 1 cup of Myzithra cheese
- Serving suggestions: With boiled rice or orzo pasta
Preparation:
- Heat olive oil in a large skillet over high heat. Season the chicken with cinnamon, salt, and pepper and brown on all sides.
Reduce heat to medium-high, add the onion and minced garlic, and cook for 3 minutes, stirring occasionally. Add the wine to remove any browned bits from the bottom and allow it to evaporate almost completely.
- Add water, tomato paste, and whole garlic cloves. Add the chicken, cover the pan, and simmer for an hour until the chicken is cooked through. Add more water if needed.
Best served with rice or orzo. Sprinkle with Myzithra cheese.
