Spinach and Fried Grapefruit Salad

Preparation:

Place 1 peeled and segmented red grapefruit in a single layer on a greased baking sheet; sprinkle with 2 tablespoons brown sugar and 1/2 teaspoon smoked paprika. Broil until golden brown, 4 minutes. In a large bowl, whisk together 2 tablespoons rice vinegar and 1 teaspoon Dijon mustard; season with salt and pepper. Toss the mixture with 2 tablespoons olive oil. Add the grapefruit, 150 grams fresh spinach, and 1/2 cup chopped walnuts; toss to combine.
