Bacon-wrapped potatoes with honey glaze topcook.tomathouse.com
Ingredients:
- 2 large potatoes (about 230 grams each)
- 12 slices bacon (350 g)
- 2 tbsp. canola oil
- 2 tbsp (30 g) butter, melted
- 1 tbsp. honey
- 1 tbsp chopped green onions
- 1/2 tsp chopped parsley
Preparation:
- Cut each potato lengthwise into 6 slices. Wrap each slice with a piece of bacon and secure the end with a toothpick. Heat the potato slices in oil in a large saucepan, reaching at least halfway up the potatoes.
Cook over medium heat until cooked through, turning occasionally, about 20 minutes. Increase the heat to high and cook until the potatoes and bacon are crispy, 3 to 5 minutes. Transfer to a paper towel and drain any excess oil.
- In a small bowl, combine melted butter, honey, onion, parsley, 1/4 teaspoon pepper and salt to taste.
- Carefully remove the toothpicks from the potato slices and transfer the potatoes to a serving dish. Drizzle with the honey glaze mixture.
