Grilled Peaches in Wine with Mascarpone topcook.tomathouse.com
Ingredients:
- 3 firm but ripe peaches, pitted and quartered
- 2 tablespoons of sugar
- 2 tbsp. cognac
- 1 tbsp lemon juice
- 0.5 cup mascarpone cheese, room temperature
- 1/4 tsp vanilla extract
- 3/4 cup dry white wine
Preparation:
- Place a grill pan over medium-high heat or preheat a barbecue grill. Lightly oil the pan or grill grate.
Place the peaches in the pan and don't move them, otherwise you won't get good grill marks. This will take about 2-3 minutes per side. Grill the peaches until they soften slightly and are heated through, about 5-6 minutes total.
- At the same time, in a medium bowl, mix sugar, cognac and lemon juice until smooth.
When the peaches are done, transfer them to a shallow baking dish. Pour the cognac mixture over them and toss to coat evenly. Let marinate for 15 minutes, stirring occasionally.
- Meanwhile, in a small bowl, combine mascarpone and vanilla extract.
Divide the peaches evenly among 6 wide glasses or ramekins. Pour the wine over them. Spoon the mascarpone mixture over the tops of the peaches and serve.
