Margarita Chicken Kebab

Ingredients:

  • 700 g skinless and boneless chicken breasts, cut into 12 strips
  • 300 ml. margarita mixes
  • 2/3 cup tequila
  • 0.5 cup chopped cilantro
  • 2 tablespoons chicken seasoning
  • Vegetable oil for greasing the grill grate
  • Arugula and lime halves for serving

Preparation:

  1. In a large zip-lock bag, combine the chicken, margarita mix, tequila, cilantro, and chicken seasoningPress out the air and seal the bag. Knead it to combine all the ingredients, and refrigerate for 30 to 60 minutes. Meanwhile, soak 12 wooden skewers in water.
  2. Preheat the grill to medium heat. Remove the chicken from the marinade and thread each piece lengthwise onto a skewer. Brush the grill grate with oil and grill the chicken until cooked through, 1–2 minutes per side. Serve the chicken on a platter with arugula and lime.
