Shrimp skewers with lemons

Ingredients:

  • 6 lemons
  • Coarse salt
  • 1 stalk lemongrass, finely chopped
  • 3 tbsp. l. olive oil
  • 3 tablespoons chili sauce
  • 2 cloves garlic, chopped
  • 1 tbsp fish sauce
  • 2 tsp. brown sugar
  • 30 large unpeeled sea shrimp
  • Vegetable oil, for grilling
  • 2 tbsp chopped fresh mint

Preparation:

  1. Finely grate the zest of 4 lemons, then mix with 3 tablespoons of salt. Squeeze the juice of 2 lemons into a bowl, add lemongrass, olive oil, chili sauce, garlic, fish sauce, brown sugar, and 1 teaspoon of lemon salt. Thinly slice the remaining two lemons and add to the bowl.
  2. Using kitchen scissors, slit the shrimp's shells along the backs without removing them. Cut off the heads and remove the dark veins, then rinse under running water. Mix the shrimp with the marinade and refrigerate for 1 hour. Meanwhile, soak 12-15 wooden skewers in water.
  3. Preheat the grill to medium-high. Thread the shrimp onto skewers. Brush the grill with vegetable oil, add the lemon slices, and grill on both sides for 2 minutes. Transfer to a serving platter. Stir the mint into the marinade. Place the shrimp on the grill and grill, brushing them with the marinade, for 2-3 minutes per side. Transfer the shrimp to a serving platter and sprinkle with lemon salt.
