Chicken wings baked in plum glaze topcook.tomathouse.com
Ingredients:
- 12 whole chicken wings, shoulder and flat
- 2 tbsp. vegetable or olive oil
- 3/4 cup Tkemali plum sauce
- 0.5 cups orange juice
- A 5 cm piece of ginger root, peeled
- 3 tablespoons tamari sauce (dark soy sauce)
- 1 teaspoon red chili flakes
- 1/4 cup chopped cilantro leaves
- 1/4 cup chopped basil leaves
Preparation:
- Preheat oven to 205°C for one hour.
- Heat vegetable oil in an oven-safe skillet over high heat. Season the chicken wings generously with salt and pepper. Once the oil begins to sizzle, arrange the chicken wings evenly in a single layer on the bottom of the skillet. Fry for 3 minutes on each side.
- Prepare the plum glaze while the wings are frying.In a small saucepan, simmer the plum sauce, orange juice, ginger, tamari, and hot pepper flakes over high heat. Bring to a gentle simmer, then reduce the heat and simmer until the wings are cooked through. Remove the ginger from the glaze.
- Pour the boiling glaze over the fried wings. Place the pan in the oven and bake for 20 minutes, turning the wings halfway through for even cooking.
- Remove the pan from the oven, and if the glaze doesn't resemble a thick syrup, return the pan to the stovetop and reduce the glaze for about 1 minute. Coat the wings with the glaze and garnish with cilantro and basil.
Serve hot or at room temperature.
