Ingredients:
Dough
- 0.5 cup whole grain flour
- 0.5 cups premium flour
- 2 tsp. granulated sugar
- 1/8 tsp salt
- 4 tablespoons cold butter, cut into small pieces
- 2 tbsp. low-fat sour milk
- 3 tablespoons of ice water
Filling
- 3 medium Golden Delicious apples, unpeeled
- 1 tbsp lemon juice
- 1/3 cup dried sour cherries
- 1 tbsp + 1 tsp cornstarch
- 3 tbsp. l. brown sugar
- 1/8 tsp ground cinnamon
Glaze
- 1 teaspoon of honey
- 1/4 teaspoon boiling water
Preparation:
- To prepare the doughIn a food processor, combine the whole-wheat flour, all-purpose flour, granulated sugar, and salt. Pulse 3 times to combine. Add the butter and pulse about 12 times, until you have a coarse crumbly mixture. In a small bowl, combine the sour milk and ice water. Pour the sour milk into the flour mixture and pulse 3-5 more times to combine.
- Form the dough into a 10 cm diameter circle and wrap in plastic wrap. Freeze for 10 minutes, or mix the dough in advance and refrigerate for up to 1 day.
- Meanwhile, preheat oven to 220°C.
- To prepare the fillingCore the apples and cut them into 0.5 cm slices. In a large bowl, combine the apple pieces with lemon juice. Add the dried cherries, sprinkle with cornstarch, brown sugar, and cinnamon, and toss until the apples are evenly coated.
- On a lightly floured surface, roll the chilled dough into a large circle, approximately 22 cm in diameter. Line a baking sheet with parchment paper, drape the dough over a rolling pin, and transfer it to the prepared baking sheet. If the dough cracks, patch it with your fingers.
- Spread the apple mixture in the center of the dough circle, leaving a 3-5 cm (1-2 inches) margin from the edge. Fold the edges over the filling. The filling will only be partially covered by the dough; it's okay if the edges are uneven.
- Bake the pie for 15 minutes, then reduce the oven temperature to 175°C (350°F), leaving the pie in the oven, and bake for another 40 minutes, until the apples are soft and the crust is golden brown.
- In a small bowl, combine honey and boiling water to make the glaze. When the pie is done, remove it from the oven and brush the honey glaze over the filling and crust. Transfer to a serving platter and let cool slightly. Cut into 6 pieces and serve warm or at room temperature.
