Slow Cooker Pork Stew

Ingredients:

  • 450 g fingerling potatoes
  • 3 carrots, cut into 5cm pieces.
  • 2 celery stalks, cut into 5cm pieces.
  • 3 cloves garlic, crushed
  • 5 cm ginger root, peeled and grated
  • 1/3 cup flour
  • 3 bay leaves
  • 1 piece of pork shoulder on the bone or pork tenderloin (0.9-1.2 kg)
  • 1 teaspoon dried thyme
  • 0.5 tsp ground allspice
  • 1 can (400g) of diced tomatoes

Preparation:

  1. Place the potatoes, carrots, celery, garlic, and ginger in a slow cooker. Stir in half the flour, season with salt and pepper. Top with a bay leaf.
  2. Rub the pork generously with salt and pepper, sprinkle with thyme and allspice, and dredge in the remaining flour. Place the pork in the slow cooker on top of the vegetables. Add 2 cups of water and the tomatoes, cover, and cook on low for 8 hours.
  3. Remove the bay leaf. Then remove the pork and shred it, or remove the bone and cut the pork into large pieces. Serve in bowls with the vegetables and broth.
