Ingredients:
- 150 g spinach leaves
- 1 Granny Smith apple
- 2 tbsp. l. olive oil
- 1 tbsp. apple cider vinegar
- 1 teaspoon Dijon mustard
- 1/3 cup walnut pieces, toasted in a dry skillet over medium-high heat until fragrant, about 2 minutes
Preparation:
- In a small bowl, whisk together the olive oil, vinegar, and mustard. Season with salt and pepper to taste.
- Drizzle the dressing over the spinach, toss to coat evenly, then divide the spinach among 4 serving bowls.
- Core the apple and cut into strips. Place a quarter of the apple on each serving of salad. Sprinkle with walnuts and serve immediately.
