Jalapeño-Stuffed Eggs topcook.tomathouse.com
Ingredients:
- 6 hard-boiled eggs, cut in half lengthwise and remove the yolks
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- Zest of 1 lemon
- 2 teaspoons chopped pickled jalapeños
- Salt and freshly ground pepper
- Fried onion rings in batter, crumbled
- Paprika
Preparation:
- Mash the yolks into a paste, add mayonnaise, mustard, lemon zest, and jalapeño pepper. Season with salt and pepper and stir.
- Fill the egg whites with the yolk mixture and sprinkle with onion and paprika.
Serve stuffed eggs as an appetizer.
