topcook.tomathouse.com

Ingredients:

  • 220 g of grated imported Swiss cheese
  • 220 g grated Gruyere
  • 2 tablespoons cornstarch
  • 1 clove garlic, peeled
  • 1 cup dry white wine
  • 1 tbsp lemon juice
  • 1 tbsp cherry brandy, such as kirsch
  • 0.5 tsp mustard powder
  • A pinch of nutmeg
  • Vegetables or bread for dipping

Preparation:

  1. In a small bowl, combine the cheeses with cornstarch. Rub the inside of a ceramic fondue bowl with garlic; discard any remaining garlic.
  2. Bring the wine and lemon juice to a gentle simmer over medium heat. Gradually stir in the cheese. Melting the cheese gradually will result in a smoother fondue. Once the mixture is smooth, stir in the cherry brandy, mustard, and nutmeg.
  3. Place small pieces of vegetables and French bread on a turntable for dipping. You can also add sliced Granny Smith apples and blanched vegetables like cauliflower, carrots, and asparagus. Spear them with fondue forks or wooden skewers, dip, and enjoy!
