Oatmeal with spinach, tomatoes and feta

Ingredients:

  • 2 cups of oatmeal
  • 2 tsp freshly squeezed lemon juice
  • 1/8 tsp red pepper flakes (optional)
  • 150 g spinach
  • 1 cup grape tomatoes, halved
  • 3/4 cup crumbled feta
  • 2 tbsp. l. olive oil
  • 2 tsp finely chopped fresh dill
  • 2 green onions, thinly sliced
  • Olives, sliced ​​(optional)

Preparation:

  1. In a large saucepan, combine 4 cups water, lemon juice, 1 1/4 teaspoons salt, 1/2 teaspoon pepper, and red pepper flakes and bring to a boil.
  2. Stir in the oats, spinach, and tomatoes, reduce heat to medium, and cook, stirring frequently, until the oats are softened and the mixture thickens, about 7 minutes. Remove the pan from the heat and stir in the feta, olive oil, and dill.
  3. Divide the oats among bowls and garnish with chives and olives, if using.
