Grilled shrimp in lettuce leaves with spicy mint sauce topcook.tomathouse.com
Ingredients:
Shrimps
- 450 g large shrimp (about 36 pieces), peeled, deveined
- 3 tbsp. l. rapeseed oil
- 12 leaves of green curly lettuce
- Hot Mint Sauce, recipe below
- Chili oil, to drizzle (optional)
- Fresh coriander leaves
Hot mint sauce
- 1 cup mint leaves + extra for serving
- 2 serrano peppers, chopped
- 4 cloves garlic, chopped
- 2.5 cm ginger root, peeled and chopped
- 2 teaspoons of sugar
- 1/4 cup white wine vinegar
- 2 tablespoons fish sauce
Preparation:
- Preheat the grill to medium-high heat. In a large bowl, toss the shrimp with oil, salt, and pepper. Grill the shrimp for 1-2 minutes per side or until cooked through. Be careful not to overcook them, or they will be tough and rubbery. Transfer to a plate.
- Place about 3 shrimp on each lettuce leaf. Drizzle with the hot mint sauce and, if desired, drizzle with a little chili oil. Sprinkle with cilantro leaves. Roll up the lettuce leaves and eat immediately.
Hot Mint Sauce: Place all ingredients except salt in a blender. Blend until smooth, add salt to taste.
