Chocolate covered banana on a stick

Ingredients:

  • 4 medium ripe but firm bananas
  • 8 wooden sticks
  • 3 tablespoons finely chopped salted peanuts
  • 170 g dark chocolate (60-70% cocoa), chopped

Preparation:

  1. Peel and then cut each banana in half crosswise and insert a wooden skewer into each half. Place on a tray, cover with plastic wrap, and freeze for about 3 hours.
  2. Place the peanuts in a shallow bowl or plate. Melt the chocolate in a double boiler over simmering water, stirring frequently. Make sure the water doesn't touch the bottom of the top bowl. Pour the melted chocolate into a tall glass. Dip each frozen banana in the chocolate, turning to coat, and immediately roll in the peanuts. Place on a tray lined with waxed paper. Serve immediately, or wrap individually in plastic wrap or waxed paper and freeze for up to 2 weeks.
