Sweet and spicy carrots with green onions in the microwave topcook.tomathouse.com
Ingredients:
- 0.7 kg carrots, peeled and trimmed
- 2 tablespoons unrefined coconut oil
- 1 tbsp. l. brown sugar
- 0.5 tsp ground cumin
- 1/4 tsp red pepper flakes
- 2 tbsp. distilled vinegar 5%
- 2 green onions, thinly sliced at a high angle
Preparation:
- Roll-cut carrots: Working with one carrot at a time, slice them diagonally, rolling the carrots a quarter turn after each cut to create bite-sized, faceted pieces.
- In an 8-inch (20 cm) square baking dish, combine the coconut oil, brown sugar, cumin, paprika, and 1 teaspoon of salt. Microwave on high until the butter melts, about 30 seconds. Stir in the vinegar and carrots. Cover with a vented lid or plastic wrap with 6 small holes.
- Cook on high power for 5 minutes. Uncover, being careful not to burn yourself with steam, and stir the carrots. Cover again and microwave, stirring every 5 minutes, until the carrots are tender and have absorbed most of the liquid, about 10 minutes more. Remove the lid and stir in all the green onions, setting aside 1 teaspoon. Transfer to a serving platter, sprinkle with the reserved green onions, and serve immediately.
