Ingredients:
- 1 cup of boiling water
- 1.5 cups of raisins
- 2 teaspoons of baking soda
- 1.5 cups of flour
- 1 cup of sugar
- 1/4 teaspoon salt
- 1 cup crushed bran flakes (breakfast cereal)
- 1 large egg
- 1/4 cup vegetable oil
Preparation:
- Preheat oven to 350°F (175°C). Generously grease and flour the insides of three empty 14-ounce (425g) tins. In a medium ovenproof bowl, pour boiling water over the raisins and baking soda. Set aside to cool.
- In a medium bowl, combine the flour, sugar, and salt. Stir in the crushed oats. Lightly beat the egg and vegetable oil together and stir into the flour mixture. Stir in the cooled raisins and water. Divide the batter evenly among 3 jars, filling them about three-quarters full.
- Bake on the lowest rack of the oven until a toothpick inserted into the center comes out clean, 40-45 minutes. Cool for about 10 minutes and run a knife around the cupcakes to loosen them. If you're baking them as a gift, gift wrap them right in the tin!
