Cheeseburgers with bacon and spicy mayo

Ingredients:

  • 4 slices of bacon
  • 0.7 kg ground beef
  • 2 tsp Worcestershire sauce
  • 0.5 cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tbsp ketchup
  • Vegetable oil, for grilling
  • 4 thick slices of cheddar
  • 4 sesame seed buns, cut in half horizontally
  • Shredded lettuce, for serving

Preparation:

  1. Preheat grill to medium heat.
  2. In a large nonstick skillet over medium-high heat, cook the bacon, turning occasionally, until browned and crisp, about 7 minutes. Transfer to a paper towel-lined plate to drain; break each slice in half.
  3. Meanwhile, in a large bowl, combine the ground beef, Worcestershire sauce, 1.5 teaspoons of salt, and a pinch of ground black pepper. Mix with your hands, but do not overwork the ground beef. Form into four 2-cm-thick patties. Make a 1-cm-deep well in the center of each patty with your thumb.
  4. Combine mayonnaise, ketchup, and Sriracha sauce in a bowl. Grease the grill with vegetable oil. Grill the patties until cooked through and crispy grill marks appear, about 3 minutes per side. One minute before they're done, top each patty with a slice of cheese and cover with a lid to melt.
  5. Grill the bun ends. Serve the patties on the buns with hot mayonnaise, bacon and salad.
