Ingredients:
- 400 g of chilled pizza dough
- 1 tbsp. marinara sauce
- 1.5 tbsp. grated mozzarella
- 0.5 tbsp. grated parmesan
- 3/4 cup chopped pepperoni, black olives, and/or mushrooms
- Extra-virgin olive oil, for greasing
- 2 cloves garlic, crushed
- A pinch of dried oregano
- A pinch of red pepper flakes
- Flour, for work
Preparation:
- Preheat oven to 220°C. Line 2 baking sheets with parchment paper. Roll out the pizza dough on a lightly floured surface into a 30x40 cm rectangle. Cut the dough into 4 pieces measuring 15x20 cm, then cut each quarter diagonally in half to create 8 triangles.
- Spread marinara sauce over each dough triangle, leaving a 1/2-inch border; sprinkle with mozzarella and Parmesan (reserve some of the sauce and cheese for topping). Arrange a few slices of pepperoni, olives, and/or mushrooms on top of the cheese, reserving a few for topping. Gently fold the two outer corners inward, then roll the dough up the long side, like a burrito, until the filling is completely inside the tube, pressing gently to seal.
- Carefully insert a popsicle stick or wooden skewer into the center of each pizza roll and arrange on the prepared baking sheets. Brush with olive oil and marinara sauce; sprinkle with garlic, oregano, and red pepper flakes. Press all additional toppings on top. Sprinkle with additional mozzarella and Parmesan cheese. Bake until golden brown, about 20 minutes.
