Ingredients:
- 0.5 cups flour
- 0.5 cup cornstarch
- 0.5 tsp coarse salt
- 1 cup of water
- 1 egg
- 2 cups breadcrumbs
- 0.5 cup grated Pecorino cheese
- 2 large zucchini, sliced 0.5cm thick.
- Mayonnaise mixed with chopped parsley and lemon juice
Preparation:
- In a bowl, combine 0.5 cups each flour and cornstarch, 0.5 teaspoon coarse salt, 1 cup water, and 1 egg. In another bowl, combine 2 cups breadcrumbs with 0.5 cup grated Pecorino.
- Cut 2 large zucchinis into 0.5cm thick slices; dip in batter, then roll in breadcrumbs.
- Fry in 1 cm of vegetable oil preheated to 175°C (350°F) until golden brown, about 3 minutes per side. Transfer to paper towels to drain excess oil and sprinkle with salt and black pepper. Serve with mayonnaise mixed with chopped parsley and lemon juice.
