Red cabbage salad with grapes topcook.tomathouse.com
Ingredients:
- 1/2 head of red cabbage, finely shredded
- 2 cups fresh black grapes, seedless, cut in half
- 1 tbsp Dijon mustard
- 2 teaspoons of sugar
- 1/4 cup olive oil
- 1/3 cup chopped fresh parsley
- 6 green onions, cut into rings
- 2 tablespoons apple cider vinegar
- Salt and freshly ground pepper
Preparation:
- Prepare the salad dressing: In a large salad bowl, combine apple cider vinegar, mustard, sugar, 1 teaspoon salt, and 1/2 teaspoon pepper. Whisk until smooth.
- Add red cabbage, parsley, green onions and grapes, mix. Refrigerate for 1 hour before serving.
