Roasted carrots with chili and lime flavor

Ingredients:

  • 700 g peeled carrots
  • 2 tbsp sour cream
  • 1 tbsp lime juice

Preparation:

  1. On a baking sheet, combine 700 g of peeled carrots with 1 tbsp of olive oil and a large pinch of salt and black pepper.
  2. Bake at 450°F (230°C) until carrots are tender and golden brown, about 25 minutes.
  3. Combine 2 tablespoons sour cream, 1 tablespoon each olive oil and lime juice, and 1/4 teaspoon chili powder; season with salt to taste. Drizzle the carrots with sour cream sauce, sprinkle with crumbled queso fresco, toasted pumpkin seeds, and cilantro.
