Turkey Picadillo Sandwiches topcook.tomathouse.com
Ingredients:
- 600 g of ground turkey
- 3 tbsp extra-virgin olive oil + extra for drizzling
- 1 medium onion, diced
- 8 cloves garlic, chopped
- 3 bay leaves
- 1 tbsp. l. ground cumin
- 1 tsp chili powder
- 0.5 tsp ground allspice
- 1 can (170 g) of tomato paste
- 1/3 cup golden raisins
- 1/2 cup chopped olives stuffed with pimento peppers + 2 tablespoons brine
- 4 soft sesame seed buns, halved lengthwise
- Sliced avocado, for serving (optional)
Preparation:
- Preheat oven to 175°C.
- In a large skillet, heat 3 tablespoons olive oil over medium-high heat. Add the onion and garlic and cook until the onion softens slightly, about 2 minutes. Add the bay leaf, cumin, chili powder, and allspice; cook for 1 to 2 minutes.
- Add ground turkey, 1 teaspoon salt, and black pepper to taste. Cook for about 5 minutes, breaking up any lumps.
- Add the tomato paste and stir until the meat turns a brick-red color, 3-4 minutes. Add 2 cups of water, raisins, olives, and olive brine. Bring to a boil, cover, and simmer over medium heat until the sauce thickens, about 15 minutes.
- Remove the lid and cook, stirring, for another 3 minutes. Season the meat sauce with salt and pepper to taste.
- Drizzle the cut sides of the buns with olive oil, place them on a baking sheet, and toast in the oven for 5 minutes. Spread the meat filling on the buns. Garnish with avocado slices, if desired.
