Basbosa - Egyptian coconut cake

Ingredients:

    Dough

  • Butter – 150 grams
  • Condensed milk - 400 grams
  • Baking powder - 1 teaspoon
  • Eggs – 2 pieces
  • Semolina – 2 cups
  • Coconut flakes - 1 cup
  • Coconut milk - 1 glass

    Syrup

  • Sugar – 1.5 cups
  • Water – 1 glass
  • Lemon juice - 1 teaspoon
  • Orange food coloring - 1 teaspoon

Preparation:

  1. Preheat oven to 180 C.
  2. Grease a large rectangular baking dish with butter. Set aside.
  3. In a large bowl, using a large wooden spoon, mix together the butter, condensed milk and baking powder. Add the eggs and mix well. Add the semolina, coconut flakes, and coconut milk. Mix well again.
  4. Place the dough into the prepared pan and bake for 35-40 minutes (until the top is golden brown).
  5. Prepare the syrup. Place the sugar and water in a small saucepan. Cook over medium heat for about 8-10 minutes. Remove from heat and add the lemon juice and orange coloring.
  6. Once the Basbousa is cooked, remove it from the oven, let it cool on a wire rack and pour over the syrup.

    Serve at room temperature.
