Italian-Style Mushroom Casserole

Ingredients:

  • 3 tablespoons extra-virgin olive oil, plus more for greasing the grill pan
  • 4–6 portobello mushrooms
  • 0.5 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 tbsp. marinara sauce (store-bought or homemade)
  • 0.5 tbsp. grated mozzarella
  • 1/4 tbsp. grated parmesan
  • 2 tbsp butter, cut into small pieces

Preparation:

  1. Place a grill pan over medium-high heat, or preheat a gas or charcoal grill.
  2. Drizzle the mushrooms with 3 tablespoons of olive oil on both sides. Season with salt and pepper. Brush the grill with olive oil to prevent the mushrooms from sticking. Grill until the mushrooms are heated through and tender, about 5 minutes per side.
  3. Preheat oven to 200°C.
  4. Spread 1/2 cup marinara sauce over the bottom of a 9 x 13-inch baking dish. Arrange the sautéed mushrooms on top of the marinara sauce and drizzle with the remaining sauce. Sprinkle with cheese and top with pats of butter. Bake until the cheese is melted and golden, about 15 minutes. Serve.
