Ingredients:
- 1 kg of chicken breasts on the bone, cut into large pieces
- Salt
- 2 tbsp. l. olive oil
- 2 apples (1 red, 1 green), cored and cut into slices
- 8 medium shallots, quartered
- 1/4 cup fresh sage leaves
- 1/2 cup lightly salted chicken broth
- 1/4 cup maple syrup
- 1/4 cup apple cider vinegar
Preparation:
- Pound the chicken breasts and season with salt. Heat olive oil in a large skillet. Add the chicken breasts, skin side down, and fry over high heat until golden brown, about 5 minutes.
- Turn the chicken breasts over and add the apples, shallots, and sage. Reduce the heat and cook for another 5 minutes. Transfer the chicken breasts to a serving dish and continue cooking, stirring, with the apples and shallots, for about 2 more minutes.
- Meanwhile, prepare the glaze: In a bowl, combine the chicken broth, maple syrup, vinegar, and 1/2 teaspoon of salt. Add the mixture to the skillet with the apples and onions, bring to a boil, and simmer for 2-3 minutes. Return the chicken breasts to the skillet and cook, turning, for about 2 more minutes.
