Ingredients:
- 2 slices French bread, 1 thick (about 60g total)
- 0.5 tsp vegetable oil
- 3/4 cup sweet onion, sliced into rings
- 1/4 tsp crushed garlic
- 1 vegetarian patty (recommended: Grillers Original)
- 1/8 tsp black pepper
- 2 tablespoons chopped tomatoes
- 1 tbsp store-bought fat-free ranch dressing
Preparation:
- In a large nonstick skillet coated with cooking spray, toast the bread over medium-high heat for 2-3 minutes, or until lightly browned, turning once. Remove from the skillet and set aside.
- Add vegetable oil to the same pan. Grease the bottom of the pan with oil. Add the onion. Cook, covered, over medium-low heat, stirring occasionally, for 15-18 minutes, or until the onion is very soft. Add the garlic. Cook, covered, over medium heat, stirring occasionally, for 4-6 minutes, or until the onion begins to darken. Remove from heat.
- Meanwhile, cook the vegetarian patty according to package directions.
- Place a patty on one piece of toast. Season with pepper. Add the onion mixture, tomatoes, and salad dressing, and top with a second piece of toast.
