Thai Glazed Chicken Lettuce Wraps topcook.tomathouse.com
Ingredients:
- 450 g of thinly sliced chicken breast meat (can be purchased in packages at the meat section of the market)
- Grill seasoning
- 2 tablespoons of vegetable oil
- 2 tablespoons of chopped ginger root
- 4 crushed cloves of garlic
- 1 large red bell pepper, seeded and thinly sliced
- 1 cup of shredded cabbage and carrot mixture (pack tightly)
- 3 green onions, sliced at an angle
- 1/2 cup plum sauce
- 2 cups basil leaves (loosely packed)
- 1 tbsp fish sauce
- 1/2 head iceberg lettuce (cut in half again)
- 1/2 seedless cucumber, sliced
Preparation:
- Slice the chicken into thin strips and sprinkle with grill seasoning.
Heat a large frying pan over high heat. Pour in the vegetable oil, then add the chicken. Fry for 2 minutes, stirring constantly. Add the ginger, garlic, pepper, cabbage, carrots, and green onions. Quickly fry, stirring, for another 2 minutes.
- Add the plum sauce to glaze the mixture, stir for a minute, then add the basil and cook until the leaves are softened.
Pour in the fish sauce and stir. Transfer the cooked chicken and vegetables to a bowl. Place a spoonful of chicken on a piece of lettuce with cucumbers, fold the lettuce around the filling, and eat like mini tacos.
