Portuguese tomato soup with sausage

Ingredients:

  • 8 cups seeded and chopped tomatoes
  • 6 cups chicken broth
  • Salt and ground black pepper
  • 4 slices of diced bacon
  • 225 gr. finely chopped linguica, and 225 gr. linguica sausage, sliced ​​into 0.5 cm thick slices
  • 225g finely chopped chorizo, and 225g cut into 0.5cm thick circles. chorizo ​​sausages
  • 2 cups chopped red onion
  • 1 tbsp plus 1 tsp Creole spice mix
  • 1/2 tsp crushed red pepper flakes
  • 2 tablespoons minced garlic
  • 2 bay leaves
  • 1/2 cup thinly sliced ​​fresh cilantro leaves

Preparation:

  1. Brown the bacon in a medium saucepan for about 2 minutes. Add the sausage and cook with the bacon until browned, about 5 minutes more. Add the onion, Creole spice mix, and red pepper flakes. Cook, stirring frequently, until softened, about 5 minutes more.
  2. Add the garlic and cook until fragrant, about 30 seconds. Add the bay leaves, tomatoes, and broth, and stir. Bring to a boil, reduce heat, and simmer for about 30 minutes. Season with salt and ground black pepper to taste. Add cilantro and serve with the sandwich as a side dish.
