Grape and Almond Cobbler

Ingredients:

    Filling

  • 5 cups red seedless grapes of any variety; if the grapes are large, cut in half
  • 2 tbsp. flour
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 tsp almond extract
  • Juice of 1/2 lemon
  • A pinch of salt

    Dough

  • 1 cup premium flour
  • 1/3 cup almond flour
  • 1/3 cup sugar, plus more for sprinkling
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 5 tbsp chilled butter, cut into cubes
  • 1 egg category CO
  • 1/2 cup heavy cream
  • 3 tablespoons chopped almonds

Preparation:

  1. Make the fillingCombine grapes, flour, sugar, vanilla and almond extracts, lemon juice, and salt in a large bowl. Shake to coat the grapes.
  2. Make the doughCombine the flour, almond flour, sugar, baking powder, and salt in a medium bowl. Mix the butter into the dough with your hands until it resembles a coarse mixture with pea-sized pieces of butter.

    Lightly whisk the egg and heavy cream in a small bowl; add them to the flour mixture and stir a few times until a sticky dough forms.
  3. Preheat oven to 190ºC.

    Spread the filling in a 20cm square baking dish. Place the grapes on top and spoon the batter over the top, leaving a little space between each grape. Sprinkle the mixture with sugar and almonds.
  4. Bake until the dough is golden brown and puffed and the filling is bubbling, 40 to 50 minutes. Cool on a wire rack for at least 30 minutes before serving.
