Kale in milk sauce with shallots

Ingredients:

    Kale with milk sauce

  • 1400 g kale, stems removed, torn into pieces
  • 3 tbsp (45 g) butter
  • 3 tbsp. chopped onion
  • 3 tbsp. flour
  • 3 cups of milk, heated until steam and small bubbles form
  • A pinch of nutmeg

    Caramelized shallots

  • 10 shallots, peeled and cut into rings, or 40 young onions, peeled
  • 6 tbsp (90 g) butter
  • 1 tbsp. sugar

Preparation:

  1. Heat the butter in a small saucepan over medium heat. Add the onion and sauté until soft. Stir in the flour and cook for 2-3 minutes, without allowing the mixture to change color. Stir in the warm milk and cook until thickened. Season with nutmeg, salt, and pepper to taste. Keep the sauce warm until serving.
  2. Meanwhile, bring a medium saucepan of salted water to a boil. Add the kale and cook until tender, about 10-15 minutes. Drain in a colander and then return to the pan. Add the milk sauce and simmer for about 2 minutes, until the kale is creamy. Season with salt and pepper to taste.
  3. Place the kale in the milk sauce on a platter and top with the caramelized shallots.

    Caramelized shallotsMelt the butter and sugar in a small saucepan over medium heat. Add the shallots, season with salt and pepper, and cook for about 10 minutes, until golden brown.
