Grilled eggplant with peanut sauce

Preparation:

In a blender, combine 2 tablespoons of peanut oil, 1 clove of garlic, the juice of 1 lemon, and a little oregano. Stir in 3 tablespoons each of olive oil and water, add salt and pepper. Slice 2 eggplants thinly lengthwise, brush with olive oil, season with salt and pepper, and grill for 3 minutes on each side. Baste the cooked eggplants with peanut sauce, sprinkle with oregano and red pepper flakes.
