Ingredients:
- 425 gr. black beans
- 2 cups grape tomatoes, halved
- 1 yellow bell pepper, seeded and cut into 1.5cm cubes.
- 0.5 cup red onion, finely diced
- 2 tablespoons finely chopped jalapeno peppers, seeded (2 pods)
- 0.5 tsp grated lime zest
- 1/4 cup lime juice (2 limes)
- 1/4 cup good olive oil
- 1 teaspoon of salt
- 0.5 tsp ground black pepper
- 0.5 tsp chopped garlic
- 1/4 tsp ground cayenne pepper
- 2 ripe avocados, pitted and peeled, cut into 1.5 cm cubes.
Preparation:
- In a large bowl, combine the tomatoes, yellow pepper, black beans, red onion, jalapeño, and lemon zest. Separately, whisk together the lime juice, olive oil, salt, black pepper, garlic, and cayenne pepper. Pour the dressing over the vegetables and toss well.
- Stir the avocado into the salad before serving. Taste for salt and serve at room temperature.
