Asparagus with Lemon Breadcrumbs

Ingredients:

  • 1 kg asparagus
  • 0.5 cup panko breadcrumbs
  • 3 tbsp. l. grated pecorino cheese
  • 2 tbsp finely chopped chives
  • 2 tsp lemon zest

Preparation:

  1. In a frying pan, heat 2 tbsp (30 g) butter over medium heat. Add 0.5 tbsp. panko breadcrumbs and 1 teaspoon chopped thyme and cook, stirring, until the breadcrumbs are golden brown, 3 to 6 minutes.
  2. Remove from heat and stir in 3 tablespoons grated Pecorino cheese, 2 tablespoons finely chopped chives and 2 teaspoons lemon zest; season with salt and pepper.
  3. Cook 1 kg (2.3 lb) trimmed asparagus in salted boiling water until crisp-tender, 2-4 minutes. Drain and toss the asparagus with 2 tablespoons (30 g) butter and a pinch of salt and pepper. Transfer to a serving platter and sprinkle with the breadcrumb mixture.
