Italian-Style Kale Meatballs topcook.tomathouse.com
Ingredients:
- 450 g lean ground beef
- 2 cups frozen chopped kale
- 0.5 cups black beans, drained and mashed
- 1 teaspoon Italian seasoning
- 2 cloves garlic, crushed
- 1 large egg
- 450 g spaghetti, boiled
- 2 tbsp. ready marinara sauce, heated
Preparation:
- Preheat oven to 230°C. Line a baking sheet with parchment paper and spray with cooking spray.
- In a large bowl, microwave the kale according to package directions. Let cool slightly.
- Add ground beef, Italian seasoning, beans, garlic, egg, 1/2 teaspoon salt, and a pinch of black pepper to the cabbage. Mix everything together with your hands. Drop mounds of the meat mixture (about 2 tablespoons each) onto the prepared baking sheet.
- Using damp hands, form the balls and spread them evenly on the baking sheet. Bake until set, 12-14 minutes.
- Serve meatballs with warm pasta and marinara sauce.
