Ingredients:
- 1 medium tomato, cut in half
- 1 tbsp red wine vinegar
- 1 tbsp. freshly squeezed lemon juice
- 2 teaspoons Dijon mustard
- A pinch of sugar
- 2 tbsp. l. olive oil
- 1/2 clove garlic, minced
- 1/8 tsp dried oregano
- 1/8 tsp dried basil
- Sea salt and freshly ground pepper
Preparation:
- Grate the tomatoes on a coarse grater, place the pulp and juice in a bowl, discard the skins.
- Add 1/4 cup water to the bowl, wine vinegar, lemon juice, Dijon mustard, sugar, olive oil, garlic, oregano, basil, 1/4 teaspoon salt, and pepper to taste. Whisk until smooth.
