Ingredients:
- 2 ready-made white sponge cakes (280-340 g each) "Angel cake" (baking recipe cupcake)
- 1 mashed ripe banana
- 2 cups sweet coconut flakes
- 1 cup melted chocolate chips or chopped chocolate
- 1 tube of ready-made green glaze
- 2 packs (450 g each) vanilla cream
- 1 tsp banana flavoring
- Yellow food coloring
- 1 cup fruit-shaped candies
- Additional equipment: 1 palm tree decoration, aluminum foil
Preparation:
- Place 1 cake layer wide side down on a serving platter. In a large bowl, combine the frosting with banana flavoring. Add yellow food coloring, 1 drop at a time, until the desired color is achieved. Set aside 1/2 cup of the banana frosting in a medium bowl and add the mashed banana.
- Spread the banana mixture over the surface of the sponge cake. Cut one oblong triangle into a wedge shape from another sponge cake (cut 5 cm long). Spread 1/4 cup of yellow frosting on the cut edge. Tear the cut wedge into cubes. Bring the ends of the second cake layer together and press to seal. Place the second cake layer, wide side down, on the sponge cake on the plate.
- Fill the center of the cake with sponge cubes. Frost the top and sides of the cake with the remaining yellow frosting. Sprinkle the cake with coconut flakes, pressing gently to ensure they adhere.
- Make a "volcano" on the island by rolling a 5-8 cm diameter volcano shape out of aluminum foil. Dip it in melted chocolate and let it cool and harden. Place the mountain on top of the cake. Fill the center of the mountain with green icing and smooth it out. Place a palm tree inside the mountain. Arrange fruit-shaped candies around the palm tree and the base of the cake.
