Burgers with pork cutlet stuffed with cheese

Ingredients:

  • 570 g coarsely ground pork
  • 110 g, broken into small pieces Manchego cheese
  • 4 Portuguese buns, halved
  • 1/4 tbsp. olives stuffed with pimento peppers
  • 2 tbsp vegetable oil, plus a little more for greasing
  • 4 cloves of garlic
  • 1 tbsp. l. dried oregano
  • 1 tbsp. chili powder
  • 2 tsp smoked paprika
  • 1 teaspoon ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground allspice
  • 3 tablespoons mayonnaise
  • Salt and ground black pepper
  • Pimento peppers, tomatoes, red onions and/or lettuce as toppings

Preparation:

  1. Preheat grill to medium-high heat.

    In a food processor, combine 2 tablespoons of vegetable oil, olives, garlic, oregano, chili powder, paprika, coriander, cumin, and allspice. Blend until smooth. Transfer the mixture to a large bowl and add 2 tablespoons of mayonnaise.
  2. Mix the ground meat with the olive mixture. Season with salt and pepper. Form 4 patties, about 1.5 cm thick. Make a well in each patty, stuff it with a little cheese, and wrap the ground meat around it. Brush the patties with oil, season with salt and pepper.
  3. Brush the grill with oil. Cook the patties until stripes appear on the bottom, 5 minutes. Flip and continue cooking until done, another 5 minutes.

    Spread the remaining tablespoon of mayonnaise on the cut sides of the buns. Lightly toast them. Serve the patties in buns with your choice of filling.
