Greek burger with turkey and tomato salad

Ingredients:

  • 600 g of ground turkey
  • 1 medium zucchini (half grated, half cut into cubes)
  • 2 tablespoons chopped marinated pepperoncini (2 to 3 peppers) plus 3 tablespoons brine
  • 1/4 cup mayonnaise
  • 0.5 l assorted cherry or grape tomatoes, cut in half
  • 3 tbsp. l. olive oil
  • 4 green onions, chopped
  • 1/4 cup mint, chopped
  • 1/2 cup finely shredded feta cheese
  • 1 teaspoon dried oregano
  • 4 pitas, warm

Preparation:

  1. In a small bowl, combine the mayonnaise and 2 tablespoons of the pepperoncini brine. In a medium bowl, combine the tomatoes with the chopped pepperoncini, the remaining 1 tablespoon of brine, 2 tablespoons of olive oil, half the green onions, and half the mint. Season with 1/4 teaspoon of salt and a few grinds of pepper. Refrigerate the mayonnaise and tomato salad while you make the burgers.
  2. In a large bowl, combine ground turkey, grated zucchini, feta, oregano, remaining green onions and mint, 1/2 teaspoon salt, and ground pepper. Mix well with your hands. Form the mixture into 4 patties.
  3. Heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. Add the patties and cook until cooked through, 4 to 5 minutes per side. Cut the pitas in half and open them. Serve the burgers and zucchini with mayonnaise sauce in the pitas. Arrange the salad on a plate.
