Pork ham stewed with beans

Ingredients:

  • 1 (2 kg) pork leg with bone
  • 450 g dried lima beans or white beans
  • 1 can (800 g) of canned whole fried tomatoes
  • 1 tbsp. ground red pepper
  • 2 tsp dried pepper flakes
  • 2 tbsp tomato paste
  • 1 bay leaf
  • 4 sprigs of fresh thyme
  • 2 tbsp. Worcestershire sauce
  • 1 bunch of green onions, cut into rings
  • 4 cloves garlic, sliced

Preparation:

  1. In a 5-6-quart heavy-bottomed saucepan, combine tomato paste, Worcestershire sauce, ground red pepper flakes, and red pepper flakes. Add the pork ham, beans, bay leaf, and thyme. Pour in 4 cups of water, cover, and simmer over low heat for 8 hours.
  2. Place the tomatoes in a bowl and mash with a spoon. Add them to the pork ham, then the green onions. Cover and simmer for another 30 minutes.
  3. Remove the pork butt from the pan and place it on a cutting board. Let it cool and slice thinly. Divide the meat and beans among servings.
