Ingredients:
- 8 wheat tortillas
- 140 g Brie cheese, sliced
- 340 g smoked turkey breast, thinly sliced
- 1/2 cup apricot jam
- 2 tbsp. grated cheese
- 2 tbsp. mixtures of fresh herbs (parsley, basil, tarragon, arugula, chives, mint, oregano)
- 1 tbsp lemon juice
Preparation:
- Preheat grill to medium heat and brush grates with vegetable oil just before grilling.
- For quesadillas: Fill tortillas with filling and roll like a taco.
For the herbal mixtureIn a bowl, mix the herbs with lemon juice. Season with salt and pepper.
Place the quesadillas on a hot, greased grill and cook for 3-4 minutes per side, or until the cheese is melted, turning with a spatula. Serve hot, sprinkled with the herb mixture.
- Cooking on the stovetopPrepare the quesadillas as directed above. In a skillet large enough to fit the tortillas, heat 1-2 tablespoons of vegetable oil over medium heat. When the oil is hot, fry the quesadillas on each side for 2-3 minutes, or until golden brown; press and flip with a large spatula. Serve as directed above.
