Turkey Quesadilla with Guacamole topcook.tomathouse.com
Ingredients:
Quesadilla
- 4 slices turkey (about 90 g)
- 3 multigrain tortillas (diameter 20 cm.)
- 6 green onions, finely chopped
- 1 jalapeño pepper, seeded and finely chopped
- 1 clove garlic, minced
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander
- 3/4 tbsp. grated low-fat cheese
- 1/4 cup low-fat sour cream, optional
- Cilantro for garnish
Guacamole sauce
- 1 ripe Hass avocado, halved, pitted, peeled
- 1 small tomato, diced
- 2 green onions, finely chopped
- 1 tbsp lime juice
- 1-2 tbsp chopped cilantro
- 1 jalapeño pepper, seeded and finely chopped
- 1 small clove of garlic, minced
- Salt to taste
Preparation:
- Guacamole sauceMash the avocado in a large bowl. Add the tomato, green onion, lime juice, cilantro, jalapeño, and garlic and toss to combine. Cover and refrigerate until serving.
Exit: 1 tbsp.
- Preheat oven to 230°C. Spray a large baking sheet with cooking spray.
- Lightly spray a small skillet with nonstick cooking spray and place it over medium-high heat. Cook the turkey, turning occasionally, until browned, about 3-4 minutes. Transfer to paper towels to absorb excess fat. Shred and set aside.
- QuesadillaIn the same skillet, cook the green onions, jalapeño, garlic, cumin, and cilantro over medium heat for 2-3 minutes, stirring frequently, until the green onions are softened. Remove from heat.
Place tortillas on a baking sheet; sprinkle 1/3 of the cheese, 1/3 of the onion mixture, and a third of the turkey mixture on one end of each tortilla. Roll the tortillas like tacos. Lightly spray the quesadillas with cooking spray.
- Bake for 8-10 minutes until golden brown and crispy.
- Cut each quesadilla into 4 triangles and serve with guacamole, sour cream and salsa sauceSprinkle with cilantro.
