Ingredients:
Chocolate sponge cake with Oreo cookies
- 2 cups premium flour, plus extra for the pan
- 3/4 cup cocoa powder
- 2 tbsp. sugar
- 1.5 tsp baking powder
- 0.5 tsp of soda
- 1 teaspoon of salt
- 3 large eggs plus 1 yolk
- 1 cup butter, melted
- 1 cup of sour milk or kefir
- 1.5 cups finely crumbled chocolate Oreo sandwich cookies
Cream cheese and biscuit filling
- 110 g butter, softened
- 450 g cream cheese, mashed
- 1 pinch of salt
- 1 teaspoon vanilla extract
- 3 and 3/4 cups powdered sugar
- 1.5 cups finely crushed chocolate Oreo sandwich cookies
Preparation:
- Preheat oven to 350°F (175°C). Spray 2 x 9-inch round cake pans with cooking spray and dust with flour.
- In a large bowl, using a hand mixer, combine the flour, cocoa, sugar, baking powder, baking soda, and salt. Add the eggs and yolk, one at a time, and beat until well combined. Then pour in the melted butter and mix. Then pour in sour milk and beat for about 2-3 minutes until smooth. Add the cookie crumbs and beat until evenly combined.
- Divide the batter evenly between the 2 pans and bake until a toothpick inserted into the center comes out clean, about 30 to 35 minutes.
- Remove from the oven and let cool in the pans on a wire rack for 5 minutes. Turn the cake layers out onto a wire rack and let cool completely. Spread the biscuits with the cream cheese frosting and serve.
Curd cream with cookies In a large bowl, beat the butter and cream cheese with an electric mixer until smooth, about 3 minutes. Add salt and vanilla. Add the powdered sugar, 1/2 cup at a time, mixing until smooth. Stir in the cookie crumbs. Frost the cake layers once they have cooled.
