topcook.tomathouse.com

Ingredients:

  • 4 uncooked chorizo sausages (about 450g)
  • 1 tbsp. l. olive oil
  • 450 g frozen chopped sweet peppers, thawed
  • 450 gr. salsa sauce
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 tbsp adobo sauce, from a jar
  • 1 tbsp lime juice
  • 4 hot dog buns
  • 2 tablespoons chopped fresh cilantro, optional

Preparation:

  1. Preheat grill to medium heat.

Place the sausages on the grill grate. Grill until golden brown, 20 to 25 minutes. Turn the sausages frequently with tongs, every 4 to 6 minutes. Be sure to close the grill lid.
  2. Place a large cast-iron skillet on a side burner of your grill and turn the heat to medium (if your grill doesn't have a side burner, place the skillet on the grill grate while you preheat it). Add the olive oil and peppers and cook, stirring constantly, until the peppers are softened, about 5 minutes.
  3. Place the salsa in a bowl. Add the chipotle peppers, adobo sauce, and lime juice.
  4. Place chorizo sausages into slit buns and fill with roasted peppers. Top with chipotle salsa and sprinkle with cilantro, if using.
