Fried eggs in tomato sauce with peppers and salami

Ingredients:

  • 2 tbsp. l. olive oil
  • 2 cloves garlic, sliced
  • 120 g salami, cut into strips
  • 1 medium onion, cut into thin half rings
  • 2 small sweet peppers (green and yellow), cut into strips
  • 1/2 tsp dried pepper flakes
  • 1 cup tomato puree or marinara sauce (see recipe) Here)
  • 1/4 cup fresh parsley leaves
  • 8 eggs
  • 2 tbsp. l. grated Pecorino Romano cheese or Parmesan
  • White bread, for serving

Preparation:

  1. Heat olive oil in a skillet over medium heat. Add garlic and cook until golden brown, about 3 minutes. Remove garlic from oil and discard.

    Increase the heat to medium-high and add the salami, onion, peppers, and pepper flakes. Cook, stirring, until the salami begins to brown, about 5 minutes. Add the tomato puree and 1/2 cup water and simmer until the vegetables are tender, about 5 minutes.
  2. Reduce the heat to medium. Sprinkle the vegetables with parsley leaves and make 4 wells. Crack 2 eggs into a bowl, then pour one into one of the wells.

    Repeat with the remaining eggs. Sprinkle with grated cheese. Cover the pan and cook until the whites are set and the yolks are cooked to your liking. Serve the fried eggs with bread.
