Avocado-Stuffed Eggs with Ham topcook.tomathouse.com
Ingredients:
- 6 hard-boiled eggs, cut in half lengthwise and remove the yolks
- 1/2 avocado
- 1/4 cup mayonnaise
- 2 teaspoons Dijon mustard
- 1.5 teaspoons of apple cider vinegar
- 1/2 cup chopped mixed herbs (dill, parsley, basil)
- 1/2 tsp chopped garlic
- Salt and freshly ground pepper
- 3 thin slices of dry-cured ham
Preparation:
- In a blender, combine egg yolks, avocado, mayonnaise, Dijon mustard, apple cider vinegar, herbs, garlic, salt, and pepper. Puree until smooth. Fill the egg whites with the mixture.
- Fry the ham until crispy and crumble it on top of the eggs.
