Ingredients:
Special sauce
- 1 cup mayonnaise
- 1 cup ketchup
- 0.5 tsp. yellow mustard
- 1 chipotle pepper in adobo sauce, finely chopped
Toppings
- 2 tbsp. l. olive oil
- 200 g of champignons (about 15 pcs.), thinly sliced
- 1 small onion, thinly sliced
Burgers
- Vegetable oil to grease the grill
- 1 kg of ground beef
- 4 slices Swiss cheese
- 4 sweet Hawaiian buns, cut in half on the side
Preparation:
Prepare the spice mix: In a small bowl, combine 2 tablespoons coarse salt, Old Bay seasoning, paprika, chili powder, and garlic salt.
Prepare a special sauce: In a medium bowl, combine mayonnaise, ketchup, mustard, chipotle pepper, and 1 1/2 teaspoons spice mix; refrigerate until ready to serve.
Prepare the topping: Heat olive oil in a large skillet over medium heat. Add the mushrooms and cook, undisturbed, until browned on the bottom, about 2 minutes. Add the onion and season with salt and pepper. Reduce heat to medium-low and cook, stirring occasionally, until the vegetables are tender, 10-12 minutes. Remove from heat and cover to keep warm.
Grill the patties: Preheat the grill to medium heat and brush the grates with vegetable oil. Form the ground beef into four 1-inch-thick patties and generously sprinkle them with the spice mixture. Grill until browned on the bottom, 5-6 minutes. Flip and grill for another 5 minutes for medium-rare. Top the patties with the mushrooms and onions, then top with a slice of cheese; let it melt for about 1 minute. Meanwhile, lightly toast the buns on the grill.
- Spread the buns with a special sauce and place the mushroom and cheese patties on them.
