Ingredients:
For pork:
- 1350 g of pork neck or shoulder, baked whole
- 1.5 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 teaspoon red cayenne pepper
- 1.5 tsp. brown sugar
- 1.5 tsp ground celery seeds with salt
- 1.5 tsp mustard powder
- Coarse salt
- 750 ml of beer
- 16 small hamburger buns, split and toasted
- Cabbage salad (shredded cabbage, carrots and onions)
For the sauce:
- 1.5 cups apple cider vinegar
- 1 clove garlic, crushed
- 1 small green chili pepper, halved lengthwise (remove the seeds for less heat)
- 2 tbsp. l. brown sugar
- 2 tbsp tomato paste
- 1 tbsp Dijon mustard
- Coarse salt
Preparation:
- Preheat the oven to 110 degrees Celsius (250 degrees Fahrenheit). Place the pork on a cutting board and make a grid pattern. Each cut should be approximately 2 cm deep with 2.5 cm holes.
- Prepare the meat rub mixture: In a small bowl, combine paprika, garlic powder, Cayenne pepper, brown sugar, celery salt, mustard powder and 1.5 teaspoons of salt. Rub the meat with the resulting mixture.
- Place the pork in a baking dish and pour in the beer. Cover with foil and bake for 3 hours. Check the meat periodically, turning it every hour.
- Remove the foil and bake for another 1.5 hours, until the internal temperature of the meat reaches 185 degrees Fahrenheit (87 degrees Celsius). Remove the meat from the oven, cover loosely with foil, and let it rest for 30 minutes.
- During this cooking marathon, prepare the sauce: In a small saucepan, combine vinegar, garlic, chili pepper, brown sugar, tomato paste, Dijon mustard, and 1 1/2 teaspoons salt, bring to a boil, and taste.
If everything is in order, the sauce is ready. Remove the chili pepper. After the sauce has cooled, it's recommended to pour it into a special bottle for easier use.
- Using two forks, shred the pork into long strands. Trim off any excess fat and any unappetizing bits. Mix the pork with the juices left in the pan after roasting and season with salt to taste.
- Place the pork on buns, drizzle with sauce, and top with coleslaw.
