Fried shrimp and Chinese cabbage with soy sauce

Ingredients:

  • 500 g peeled shrimp medium size
  • 1/2 head of cabbage Chinese cabbage (Napa cabbage), cut into 2.5 cm strips.
  • 4 green onions, cut into rings, greens cut diagonally
  • 1 tbsp finely grated ginger
  • 1 clove of garlic, finely grated
  • 1 egg white
  • 1.5 tbsp cornstarch
  • 1.5 tbsp soy sauce
  • 1.5 tsp sherry or white wine vinegar
  • 1/2 cup unsalted chicken broth or water
  • 2 tablespoons of vegetable oil
  • Boiled polished rice as a side dish (optional)

Preparation:

  1. In a large bowl, beat the egg white, 1 tablespoon cornstarch, and 1 teaspoon soy sauce until foamy. Add the shrimp and stir. Refrigerate for 10 minutes.
  2. Meanwhile, prepare the soy sauce mixture: pour the chicken broth into a small bowl and whisk in the soy sauce, remaining cornstarch, and wine vinegar.
  3. Dry the shrimp. Fry the white part of the green onion, ginger, and garlic in vegetable oil over medium heat. Add the shrimp and fry for another 3 minutes. Add the Chinese cabbage and stir-fry for another 2 minutes until tender. Pour in the soy sauce mixture, bring to a boil, and simmer for a few minutes.
  4. Mix fried shrimp and cabbage with green onions. Place on serving plates with rice.
